The Godmothers by Monica McInerney has one, I wasn’t a huge fan of the book though.
The Layover by Lacie Waldon is about a flight attendant and a heartthrob (but a player) pilot. Hmmmm, talk about stereotypes. I bought the book some time ago but haven’t read it yet. It could be corny, but it might be fun. I guess I’m hoping for the latter adjective to be the best fit whenever I eventually read it.

It is nonfiction, but the kids in The Honey Bus: A Memoir of Loss, Courage and a Girl Saved by Bees take a plane trip.

Glide Path, Arthur C. Clarke’s only non-SciFi novel
I read Clap When You Land by Elizabeth Acevedo to fill that square
The Sound of Glass by Karen White. A semi-murder mystery (that’s all I can say without reviling a plot twists).
